Day 361 - April 2, 2011

Today we began our morning with VOO (Vegan Overnight Oats) -- something we have been doing for the past few days. We began reading about them here and wanted to give them a try. Turns out we love them!
In our VOO we put: rolled oats, chia seeds, all-natural cocoa powder, vanilla, agave nectar, and almond milk. We stir everything together and let it get happy in the fridge overnight. 
In the morning we add whatever suits our fancy -- Christie has been enjoying shredded coconut in hers, and I have been loving peanut butter in mine. They are seriously delicious, and I know they will be the PERFECT breakfast when we are in the depths of a hot summer. So refreshing! 
In the morning we embarked on a trip to Waterloo to meet up with Kristen, Sarah, Brooke, and Eric (her new-ish boyfriend). From there we began a journey along Cayuga Lake to enjoy a few wineries, eat lunch, and then ultimately end up in Ithaca. 
During a break at the Thirsty Owl winery, we hung out on the lawn, enjoyed the view, and witnessed an epic battle between Christie and her snack of soy jerky. Needless to say, the package was quite difficult to open! She can really make anything look cute. :) 
I was in love with the blue skies and all of the fluffy, dramatic clouds! 
Below: Hanging out with friends while waiting for Brooke and Eric to join us (we got separated between wineries, but no big deal). After this we went to lunch at O'Malley's, also along the lake.

Okay, these photos are slightly out of order (since we went to Montezuma first), but I'm glad my favorite winery was part of the day! 
We made sure to stop at Taughannock Falls which were so beautiful. I am glad Christie convinced me to get my "nice camera" out of the car because we got some good shots! Here I am with my college girlies:

We decided to stop at another view, and here is Christie climbing up to the bridge... 
It really was quite lovely! 




Once we arrived in Ithaca we wandered around the Commons for a bit, but we could only go to a few stores because most of them closed at 6 pm. We had a relaxing dinner at Kilpatrick's, an Irish pub and a place most of us had been before. We had some great food! Sadly, Sarah had to drive back to Syracuse after dinner, but Christie, Kristen, Brooke, Eric and I went to the Atomic Lounge for a drink before the college kids descended on the bar.
All in all, a very nice day!
