Christie made a delicious tofu wrap with avocado and salsa for lunch... ya sure can't beat that!
In the afternoon we headed to Horizon Fun FX to do a little bit of rollerskating! We wanted to give it a try what with all the derby excitement in the past year. :-) In hindsight, Saturday afternoon on a rainy day may not have been the best time to go, but it was still fun! Let me just say that you may end up seeing a certain Emblazin' on a derby team in the future (ha). We are now experts in dodging little kids whilst on wheels, that's for sure. Talk about a crowd!

After a fun afternoon of skating we decided to head to John's Tex Mex for some grub. We love it there because it's easy to get vegetarian/vegan fare because they offer "un-beef" and tofu for any of their dishes. Also, everything is ridonkulously inexpensive which means... score!
