WOW! I can't believe this is finally it! It feels so good to have completed Project 365 and to have a whole year documented. I will have a more reflective blog post in the near future, but I'm just so happy that I reached the end without forgetting a day. On another note: Where the heck did the year go?!
I thought a food post would be a fitting end to my Project 365 blog since this was definitely a year of trying new foods, eating healthier (i.e. transitioning to a mostly vegan diet), and having fun cooking together!
Tonight we had a spicy black bean veggie burger loaded with delicious vegan toppings, including freshly-sliced tomato, pepper jack Daiya "cheese" (a new favorite of ours), and avocado.
Guess who was also a fan!
