Day 266 - December 28, 2010

Since I had today off and, unfortunately, Christie had to work, I decided to make seitan. It is a gluten-based meat alternative (much like tofu, only chewier with more flavor) that I have been wanting to make for a while now, and I am floored by how easy it is to make!
This is the 'Surefire Seitan' recipe from Isa Chandra-Moskowitz's new cookbook, Appetite for Reduction.
I made a dough with vital wheat gluten and chickpea flour (with a few other additional ingredients) and then simmered the "patties" in vegetable broth and soy sauce for about 45 minutes. 
I let them drain before putting them in the fridge to be used a little later. 
Super easy and delicious!!
